Apple Cinnamon Energy Bites
Ingredients:
1 cup rolled oats
1/2 cup almond butter (or your favorite nut/seed butter)
1/4 cup honey or maple syrup
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/2 cup finely chopped dried apples
1/4 cup chopped nuts (such as almonds, walnuts, or pecans)
A pinch of salt
Instructions:
Mix Dry Ingredients: In a mixing bowl, combine the rolled oats, chopped dried apples, chopped nuts, cinnamon, and a pinch of salt. Give it a good stir to evenly distribute the ingredients.
Add Wet Ingredients: Add the almond butter, honey (or maple syrup), and vanilla extract to the dry mixture. Mix well until everything is thoroughly combined. You can use a spoon or even your hands to make sure it's nicely incorporated.
Chill the Mixture: Place the mixture in the refrigerator for about 15-20 minutes. Chilling the mixture makes it easier to handle and shape into bites.
Shape into Bites: Once the mixture has chilled, take small portions and roll them between your palms to form bite-sized balls. You can make them as big or as small as you like.
